Easy Garlic and Pepper Cauliflower Fried “Rice”

This is a great side dish! Easy to make and delicious. Rice is everywhere in Hawaii, and rice is not a part of my grain free diet – so this side dish makes for a nice substitute. I am not going to tell you it tastes just like rice. Because it doesn’t taste like rice at all. It may look a little like rice. Well, not really. Okay…hmm…well…it just works as a side dish in ace if rice, and it’s yummy! Enjoy!


2 TBSP coconut oil
1 large head of cauliflower, chopped or crumbled (if you will) into small pieces
1 red onion, diced
3 cloves of garlic (or more if you like)
Fresh ground black pepper to taste
Sea salt to taste

In a large skillet, melt coconut oil on medium low heat. Add all ingredients and sauté for 3-5 minutes. Once everything is well coated with oil, garlic and spices, cover and cook on medium low for approximately 8 minutes or until cauliflower becomes tender, but not mushy.

I served this dish with steak seasoned with grilled onions, peppers and garlic. A very fast meal to prep and serve. And it was inexpensive to make. Enjoy!
