One-Skillet Italian Chicken

A new quick go to for our family! I use my large electric skillet for this dish. It generally fits 4 medium to large chicken breasts, which is just right for our family of nine.

With a little oil in the pan, place chicken breasts in a single layer. Season chicken with sea salt and ground pepper, and about ten whole cloves of garlic. Add about 1/4 c water to pan so spices do not burn. Place lid on pan and cook on medium to medium high heat until chicken is a light golden brown on the pan side. Turn over and cook another few minutes on the other side.

After chicken is mostly done, turn off heat, and slice chicken.
Add:
1 can of organic, diced tomatoes
1 can organic tomato sauce
1 cup pesto
Toss chicken and garlic in sauces to mix and coat well.

Cook on low heat for an additional 15 minutes to combine favors. Top with a few generous pinches of fresh grated Parmesan or other hard Italian cheese. Serve hot over gluten-free noodles, your favorite pasta or rice. We serve this with a large, green salad! Yum!
