6 TBSP Extra Virgin Olive Oil
4 TBSP Balsamic Vinegar
Juice of two whole lemons, freshly squeezed
4 to 6 cloves of freshly pressed garlic (do not use chopped cloves from a jar, as it will make the dressing bitter)
Pinch of Celtic salt, or sea salt
Pinch of black pepper
Shake well in a mason jar, or other dressing carafe.
For a sweeter variation, add two tablespoons of real maple syrup.
Great on all sorts of salads – including green salads, and whole grain salads such as quinoa. My children also like this dressing over rice as a change to shoyu (soy sauce).
