Delicious Hawaiian treat
Simple to make! Can be made with wholesome ingredients!
3 c (approx two cans) coconut milk
4 TBSP Maple syrup or Raw Blue Agave
3 TBSP cornstarch
Scald two cups coconut milk in saucepan stirring rapidly with wire whisk which will make the milk get foamy. With reserved coconut milk mix sweetener and cornstarch until smooth. After milk in pan has scalded add the reserved cup of milk and ingredients. Continue to stir mixture until thick like warm pudding. Pour into 8 x 8 pan and refrigerate for three hours. Although it is generally served with no topping, I have topped this dish with beautiful rings of purple Hawaiian sweet potato, toasted coconut or chopped macadamia nuts.
