Great Soup!

Today I melded a couple different recipes I had and came up with a delicious, thick and creamy soup…I made a huge pot so we can enjoy more tomorrow.

6 c carrots (chopped)
2 c celery
2 c onion
5 cloves of garlic minced
1 lg sweet potato
1 med sized Yukon gold potato
4 Tbsp yellow curry powder
1 Tbsp turmeric
1 tsp sea salt
1 tsp combined red and black pepper (finely ground)
4 Tbsp olive oil
6 c homemade chicken or turkey stock
6 cups water

Heat olive oil on low medium heat add all vegetables (chopped) then spices. Saute complete mixture for 15 mins. . Add broth and water and cook 30 to 40 minutes until flavors are well combined and veggies are all tender. I used a stick mixer/blender and creamed the ingredients together and served as soup over a scoop of short grain rice. Delicious!
